Weekend Plans

Guess what we've got planned in a few days...

GO RVING

Yep, it's Camping Club Weekend!

As some of you may remember, I stayed home last month and didn't attend the camp out...so I'm very excited to be seeing my camping girlfriends (and their hubby's of course!) It's been 2 long months.

I've mentioned that they are ALL gourmet cooks, except ME! Anyone out there got any good, easy recipes for me? I have a breakfast dish I'm going to try and possibly a dessert picked out to make, but that's it. I'm open to any and all suggestions!

Hi Linda, Sounds like a lot of fun. The only recipes I can think of that are quick and convenient are burritos or tostadas.

What fun! I wish I could get my hubby interested in camping. We have several great lakes nearby that would be perfect for it.

Have a FABULOUS time! Sounds like so much fun, and such a lovely time of the year to get away. My crowd-pleasin' lasagna is always good. Find it filed under Stouffer's in the frozen food aisle.

How fun!
We used to camp out every summer when the kids were younger.
Your way seems the way to go. That sounds like so much fun meeting up with the other couples.
We always stayed in tents.
Now we have friends who have a lake home and that's great. :)
I love to cook and have recipes I could pass along. What exactly are you looking for?
I know you said you have a breakfast recipe, but I have a really good breakfast pizza recipe.

I have a delicious broccoli cauliflower recipe. You mix it with a delicious sauce that is sooo good. I always get asked for the recipe. It makes a nice side dish.

I'll email the recipe to you if I can find it. =)

linda, these are great:
turkey croissants...
shaved (i buy butterball cut from the deli) turkey (1 lb.)
1 (8 oz.) pkg. cream cheese, softened
1/4 c. orange marmalade
1/2 c. chopped pecans (i usually toast these a little)
6 croissants or rolls, split
3/4 c. whole berry cranberry sauce
lettuce leaves
baby swiss (optional

combine cream cheese, marmalade and pecans in small bowl. spread mixture on top and bottom halves of croissants. layer turkey on bottom halves. spoon 2 tablespoons cranberry sauce over turkey. add lettuce and top of croissant.

linda, i always have swiss, extra turkey and croissants so that those who don't like nuts, cranberry sauce, etc... have an option. these are very, very good:D

tortellini salad with/without shrimp

boil 1 package of cheese tortellini (allow to cool) and mix with diced artichokes, sun-dried tomatoes (or fresh garden tomatoes diced) (really any vegetables you like (i do black olives, red onion, etc)). add boiled, pealed, deveined shrimp to pasta and vegetables. dress with italian dressing (regular, light, or fat-free). pepper and grated parmesan to taste:)
